Warm, Gooey, Sweet, Delicious Breakfast.

I am a huge fan of oatmeal for breakfast… it’s warm, it’s sweet – what’s not to love? But, I’m also trying to branch out and try some different things.

As luck would have it, I found some really yummy alternatives! This is one of them:

This Ain’t Oatmeal:

2 Bananas Sliced
2 Cups Coconut Milk
1 Cup Finely Shredded Coconut (unsweetened – not the stuff for baking)
Handful of Pecans Crushed

Grease an oven safe dish with either olive oil, coconut oil, or butter. Put all the ingredients in and mix well. Set oven to Broil. Broil everything for 5 minutes. Stir well. Broil again for another 5 to 7 minutes – until everything is done to your liking.

I’ve also done this with a mixture of peaches, pineapple, banana and pear – that’s awesome too… And, I’ve added cinnamon to this mixture – that’s delicious too. The possibilities are endless – enjoy!

    Sounds yummy…I only started eating oatmeal about a year ago…I’m not ready to give it up…but might try this for a change of pace!

    The beautiful thing is Jane, you could ADD this to oatmeal… or give it a whirl just on its own. I’ve also done a version with pumpkin, pecans, cinnamon, and a little heavy cream… OMG – just like pumpkin pie!
